If you love zoodles, then you will love this way to switch it up and have them for breakfast! These look alot harder to make than they actually are! I like to spiralize a lot of zucchini at the beginning of the week to have ready to go for instances like this when I crave them! They are also really yummy with sweet potato noodles too. Paired this with avocado & it’s super satisfying and filling.
Ingredients:

2 eggs

Zucchini
-
Avocado
-
Red pepper flakes
Directions:

Heat cast iron skillet with a little avocado oil and toss in zucchini noodles

Once noodles have heated up, form little nests with a small hole in the middle

Break egg into the middle and place top over pan to let eggs cook

Once the whites have cooked over, scoop up off the pan

Top with red pepper flakes, fresh dill & avocado on the side
