Zucchini Noodle Egg Nests
If you love zoodles, then you will love this way to switch it up and have Zucchini Noodle Egg Nests for breakfast! These look alot harder to make than they actually are! I like to spiralize a lot of zucchini at the beginning of the week to have ready to go for instances like this when I crave them! They are also really yummy with sweet potato noodles too. Paired this with avocado & it’s super satisfying and filling.

Ingredients:
- 2 eggs
- 1 medium zucchini, spiralized
- ½ avocado, sliced
- ½ teaspoon red pepper flakes (optional)
- 1 teaspoon fresh dill (optional)
- 1 tablespoon avocado oil or olive oil
- Salt and pepper to tast
Directions:
- Prepare the Zucchini Noodles: If you haven’t already, spiralize your zucchini into thin noodle-like strands. You can use a spiralizer or a julienne peeler. Pat the noodles dry with a paper towel to remove excess moisture, which will help them crisp up better in the pan.
- Heat the Skillet: Place a cast iron or non-stick skillet over medium heat and add the avocado oil. Let it heat for about 30 seconds.
- Cook the Zoodles: Toss the zucchini noodles into the pan and sauté for 2-3 minutes, stirring occasionally. You want them to soften slightly but not become too watery.
- Form the Nests: Using a fork or tongs, arrange the zucchini noodles into small circular nests, creating a small well in the center of each nest.
- Add the Eggs: Crack one egg into each well. Reduce the heat to low and cover the skillet with a lid to allow the eggs to cook evenly.
- Cook Until Set: Let the eggs cook for 3-5 minutes or until the whites are set but the yolks remain runny (or longer if you prefer firmer yolks).
- Serve and Garnish: Carefully remove the nests from the pan using a spatula. Sprinkle with red pepper flakes, fresh dill, salt, and pepper. Serve with sliced avocado on the side.
- Enjoy! Your Zucchini Noodle Egg Nests that is so healthy for you!
Variations:
- Sweet Potato Noodle Nests: Swap the zucchini for spiralized sweet potato for a heartier and slightly sweeter option. Cook the sweet potato noodles for an extra 2-3 minutes before forming the nests.
- Cheesy Nests: Sprinkle shredded Parmesan or feta over the nests before adding the eggs for a delicious, melty touch.
- Spicy Kick: Add a drizzle of sriracha or a pinch of cayenne pepper for some extra heat.
- Protein Boost: Cook some turkey bacon or chicken sausage on the side for added protein.
- Mediterranean Twist: Top with crumbled feta, cherry tomatoes, and a drizzle of olive oil.
