Ham and cheddar cottage cheese egg bites
Having breakfast prepped and ready is the key to successful mornings, especially when they’re busy! These Ham And Cheddar Cottage Cheese Egg Bites are one of my favorites to have and easily reheat in the mornings.

Iโm always looking for new ways to switch up what Iโm prepping for breakfast, especially because starting my day with a solid protein-packed meal makes such a difference in how I feel. Whether itโs a long run morning during marathon training or a busy weekday with meetings back-to-back, having something nourishing ready to go helps me stay satisfied and energized instead of scrambling for something last minute.
Thatโs where these ham and cheddar cottage cheese egg bites come in. I love having options in the fridge that I can easily grab on those hectic mornings, especially when Iโm coming home from a run and need something quick, or when Iโm running out the door with no time to think. These egg bites are perfect for that. You can make them at the beginning of the week, store them in the fridge, and simply pop one or two in the microwave for a minute or two. Thatโs it โ minimal effort, maximum payoff.
I usually like to pair them with a piece of toast or an english muffin to make it more of a complete meal, but theyโre great on their own too. The ham, cheddar, and chives combo is one of my favorites, but theyโre also easy to customize depending on what you have on hand. Iโve made them with crumbled bacon and cheddar before, and theyโre just as good. These are one of those breakfast staples I always come back to โ simple, satisfying, and exactly what I want to have prepped and ready for the week ahead.
What you need for Ham and Cheddar Cottage Cheese Egg Bites:
- Eggs
- Cottage Cheese
- Ham
- Chives
- Shredded Cheddar Cheese
- Sea Salt
- Black Pepper
- Avocado Oil Spray
How to make these egg bites:
- Preheat oven to 350 degrees.
- In a blender, add eggs, cottage cheese and salt and pepper. Blend to combine.
- In your silicone egg pan, spray with avocado oil spray.
- Chop up chives and ham. In your pan, add chives, ham and shredded cheddar to fill each.
- Pour egg mixture on top to just before completely full.
- Place in the oven for 22-25 minutes or until eggs are no longer runny on the top.
- Remove from pan. Store in sealed container in the fridge and reheat for 1-2 minutes in the mornings.
- Enjoy!
