Curried Cauliflower and Farro

If you love salads, you’ll love this curried cauliflower and farro salad. I had some inspiration to make this salad after having one from the pre-made section at Whole Foods. I love finding ways to make these things that you can get out, but made easily at home. That way, you know you can always make it at home!

Curried Cauliflower and Farro

What you need:

  • 1 small head cauliflower
  • Red onion
  • Peas
  • Golden or regular raisins
  • Farro
  • Cilantro
  • Olive oil
  • White wine vinegar
  • Apple Cider Vinegar
  • Curry Powder, Ginger, Paprika, Cumin, Garlic, Sea salt and Pepper

How to make:

  1. Start by preheating the oven to 350 degrees. Chop up cauliflower into smaller pieces and lay on baking sheet with red onion. Drizzle a little olive oil on top with sea salt and pepper.
  2. Bake for 22-25 minutes. Flipping half way through.
  3. Cook farro according to package.
  4. In large bowl, combine roasted cauliflower, peas, raisins and cooked farro.
  5. In separate bowl, combine olive oil, white wine vinegar, apple cider vinegar and spices. Mix thoroughly.
  6. Add mixture with large bowl of cauliflower. Mix to combine.
  7. Store in the fridge!

Serve this salad with:

  • As a side with turkey burgers or chicken
  • On top of greens
  • With salmon

Delicious, flavorful salad

Ingredients

  • 1 small head cauliflower
  • 1 cup chopped red onion
  • 1 cup peas
  • 1 cup golden raisins
  • 1 cup farro, cooked
  • 1/3 cup olive oil (+ extra for baking)
  • 2 tbsp apple cider vinegar
  • 1 tbsp white wine vinegar
  • 2 tsp curry powder
  • 1/4 tsp ginger
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • 1/2 tsp sea salt
  • dash of pepper

Instructions

  1. Preheat oven to 350 degrees.
  2. Chop cauliflower head into smaller pieces. Lay on baking sheet with red onion.
  3. Drizzle with a little olive oil, sea salt and pepper.
  4. Bake for 20-25 minutes, flipping half way through.
  5. Cook farro according to package.
  6. Once finished baking, pour into large bowl and add peas, cooked farro, and raisins.
  7. Prepare sauce mix by combining in a separate bowl: olive oil, apple cider vinegar, white wine vinegar and spices. Mix throughly.
  8. Pour mixture on top of cauliflower and large bowl. Mix together to combine.
  9. Enjoy!!
