It’s time to switch up your breakfast or snack with this Strawberry Chia Pudding! Not only is this a great way to use the strawberries in season, but it’s perfect to meal prep for the week too. Chia pudding makes for a balanced breakfast that will leave you feeling good.

I’m always looking for simple ways to switch up what I fix for breakfast each week. One reason why I love chia pudding is because it’s so simple to make and great for a grab and go breakfast in the morning. All you need is about 10 minutes to make this chia pudding and you’ll have two breakfasts ready for the week. Adding a little breakfast meal prep into your routine will help you start the day off right and leave you feeling energized in the mornings.

Once you prepare this Strawberry Chia Pudding, you can use it to top with fresh fruit or make into a yogurt parfait with granola, greek yogurt and fresh fruit.

What you need to make Strawberry Chia Pudding:

  • Strawberries
  • Unsweetened Vanilla Almond Milk
  • Chia Seeds
  • Cinnamon
  • Maple Syrup
  • Vanilla extract
  • Sea salt

How to make chia pudding:

  1. In a blender, add strawberries, maple syrup, almond milk, vanilla extract, cinnamon and sea salt. Blend together.
  2. In a jar, add chia seeds and blended strawberry milk. Mix together.
  3. Place in the fridge for an hour before mixing again.
  4. Let it sit in the fridge for 4+ hours before enjoying.
  5. Top with more strawberries and shredded coconut.
  6. Enjoy!

How to store strawberry chia pudding:

It’s best to store your strawberry chia pudding in a sealed container in the fridge. I like to use these Weck Jars because I love the wide mouth when making it! Or these containers are ones that I use all the time for storage in my kitchen.

If you want to pair this chia pudding, try these options:

  • Add it to greek yogurt to make a yogurt parfait with chia pudding!
  • Have it as a side with your scrambled eggs or savory breakfast.
  • Top it with fresh fruit, nut butter and shredded coconut for all the flavors.

This Strawberry Chia Pudding is perfect for a simple breakfast during the week! Made with fresh strawberries and other simple ingredients. Add this to your meal prep routine!

Ingredients

  • 4 tbsp chia seeds (2 tbsp each container)
  • 1 cup strawberries, chopped
  • 2 tbsp maple syrup
  • 1 cup unsweetened vanilla almond milk
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract
  • dash of sea salt

Instructions

  1. In a blender, add strawberries, almond milk, vanilla extract, maple syrup, cinnamon and sea salt. Blend together.
  2. Add 2 tbsp each of chia seeds to a jar. Pour half of strawberry mixture in with each jar of chia seeds. Mix together.
  3. Place in the fridge for an hour before mixing again.
  4. Place back in the fridge for 4+ hours before enjoying.
  5. Top with fresh strawberries, shredded coconut or nut butter.
  6. Enjoy!
