Key Lime Greek Yogurt Bars

You know when it’s hot out and you want a treat but don’t feel like baking? These Key Lime Greek Yogurt Bars are perfect to throw together! They are made with simple ingredients, including greek yogurt which makes for a delicious, healthy snack. If you want something delicious to keep in the freezer, plan to make these! Key Lime Greek Yogurt Bars

There’s something about the key lime flavors that just screams summer to me! It’s refreshing, tangy and all the flavors that I love this time of year. Plus, in a greek yogurt it’s even better! If you haven’t tried it, pick some up next time to make these Key Lime Greek Yogurt Bars. What I love about these bars is that they help satisfy the sweet tooth while also packing in a little protein with each one! Greek yogurt is a great source of protein and is a go-to snack of mine during the day. There are so many ways to switch up how you enjoy greek yogurt, including making these bars.

Can I use any greek yogurt?

Yes! You can use any of your favorite greek yogurts here. If you also don’t love key lime flavors or can’t specifically find it, you can switch this out for another flavor of greek yogurt. Obviously, you will want to leave out the additional lime flavors here if you decide to do that.

Can I use a different sweetener?

If you don’t have honey or want to switch it out here, you can also use maple syrup!

How to make:

  1. Start by pulsing a bag of Purely Elizabeth Ancient Grain Granola in the blender or food processor.
  2. Melt coconut oil in the microwave for 20-30 seconds, until completely melted.
  3. Mix pulsed granola with coconut oil and mix.
  4. Lay parchment paper in an 8×8 dish. Pour mixture into the pan and press down to completely cover the bottom of the pan. Place in the freezer.
  5. In separate bowl, mix greek yogurt with honey, vanilla extract, lime and lime zest. Mix to combine.
  6. Pour yogurt mix on top of crust to evenly coat.
  7. Place in the freezer for 4+ hrs.
  8. Cut into pieces and store in the freezer.

How to store these Key Lime Greek Yogurt Bars:

It’s best to keep these bars in the freezer! When you decide you want to enjoy one (or three), I recommend leaving them out of the freezer for a couple minutes before enjoying. They are best when the greek yogurt has had some time to melt. I like to store them in these reusable bags in the freezer!

These Key Lime Greek Yogurt Bars make for a delicious summer treat made with just a few simple ingredients. You'll love this easy freezer treat!

Ingredients

  • 1 bag Purely Elizabeth Ancient Grain Granola
  • 1/4 cup coconut oil, melted
  • 2 containers greek yogurt key lime flavored (5.3 oz each)
  • 1 tbsp honey
  • 1/4 tsp vanilla extract
  • juice of 1 key lime
  • 1 tsp key lime zest

Instructions
