I’m always looking for new easy weeknight dinners to add to the rotation and baked tacos are always a go-to! These Ground Turkey & Black Bean Baked Tacos are perfect to make for a simple dinner that’s both healthy and satisfying too.

Ground Turkey & Black Bean Baked Tacos

When dinnertime rolls around, the last thing I want to be doing is trying to think “What’s for dinner?” I like to have a few meals that I can always fall back on that I know will cover all the bases for my meal. I love a baked taco because there are so many ways to switch them up too! It’s also an easy way to get a protein packed meal in at dinner too. When planning out my meals at home, I always aim to use ingredients that I already have in the pantry or fridge too. Generally, you can find corn tortillas, black beans, onion and a protein on hand–which makes these super easy and minimal ingredients that I need to grab at the store!

Add these Ground Turkey & Black Bean Baked Tacos to your easy dinner rotation!

What you need for Ground Turkey & Black Bean Baked Tacos:

  • Ground Turkey
  • Refried Black Beans
  • Corn Tortillas
  • Yellow Onion
  • Diced Green Chiles
  • Garlic Cloves
  • Beef Broth
  • Tomato Paste
  • Shredded Mexican Cheese
  • Garlic Powder
  • Paprika
  • Cumin
  • Chili Powder
  • Sea Salt
  • Black Pepper

How to make these tacos:

  1. Preheat oven the 375 degrees.
  2. Prepare the ground turkey mixture by heating up a non-stick skillet with extra virgin olive oil.
  3. Add minced garlic and onion to the pan to saute.
  4. Add in ground turkey to brown. Combine with seasonings and broth and bring to medium high heat to soak up broth before returning heat to medium/low.
  5. Mix in tomato paste and green chiles. Adjust salt if needed.
  6. Lay tortillas out on baking sheet. Place in the preheated oven for 3 and a half minutes.
  7. While tortillas are still warm, assemble with remaining ingredients. **This is important to do while still warm!
  8. On one side of the tortilla, add refried black beans, ground turkey mixture and shredded mexican cheese on top. Flip over so tortillas are laying on cheese side. Do this to all tortillas.
  9. Lightly spray with avocado oil spray.
  10. Place in the oven for 15 minutes. Lightly broil to finish if you want a crispier taco.
  11. Top with cilantro and jalapeno sauce. I used this one!
  12. Enjoy!

How to store your leftover tacos:

It’s best to store any leftovers in the fridge. I like using these containers for easy fridge storage.

If you want to switch it up, try doing this instead:

  • Use ground chicken or beef!
  • Top the tacos with a different sauce like my creamy jalapeรฑo sauce or another favorite of yours!
  • Try using your favorite corn tortillas or almond flour tortillas instead.

FAQs:

Can I use different tortillas?

Yes! I also like to use the Siete Almond Flour tortillas for this recipe. Any corn tortilla will work but I don’t recommend using a flour tortilla.

Do I have to use ground turkey?

No! You can substitute this for ground beef or ground chicken as well.

Can these be meal prepped?

While these taste best right after being prepared, they can also easily be reheated in the oven or the microwave later on too.

Ingredients

  • 1lb ground turkey
  • 7-8 corn tortillas
  • 1 cup yellow onion, diced
  • 2 garlic cloves, minced
  • 4oz mild green chiles
  • 3/4 cup shredded mexican cheese
  • 1 cup refried black beans
  • 1 tbsp extra virgin olive oil
  • 1/4 cup beef broth
  • 1 1/2 tbsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1/2 tsp chili powder
  • 1/4 tsp black pepper
  • Avocado Oil Spray
