Ground Beef & Butternut Squash Skillet

I love a meal that comes together in one pan for an easy weeknight dinner. This Ground Beef and Butternut Squash Skillet packs in protein, flavor and super simple ingredients for a delicious dinner.

Ground Beef and Butternut Squash Skillet

When dinner time rolls around, I’m always looking for meals that I can make in minimal time and ones that use up some pantry staples that I always keep around. I love using ingredients that are in season too which is where this butternut squash addition comes in! If you haven’t already tried the Ground Turkey and Sweet Potato Skillet, this one is very similar to that.

This one pan meal not only packs in some great protein, but also loads up the veggies and gives you the opportunity to use different ones that you may already have on hand too! The butternut squash is a delicious fall addition and one that cooks perfectly on the stovetop by sauteing for a couple minutes.

What you need for Ground Beef & Butternut Squash Skillet:

  • Ground Beef
  • Butternut Squash
  • Yellow onion
  • Garlic cloves
  • Black Beans
  • Red Bell Pepper
  • Beef Broth
  • Tomato Paste
  • Garlic Powder
  • Cumin
  • Paprika
  • Onion Powder
  • Chili Powder
  • Sea salt
  • Black Pepper

How to make this skillet:

  1. In a heated non stick skillet, add olive oil to pan.
  2. Add in minced garlic and onion to pan to saute.
  3. Add in ground beef to brown. Mix in seasonings to ground beef.
  4. Mix in tomato paste, red bell pepper, cubed butternut squash and beef broth. Mix to combine. Bring to a slight boil for 2-3 minutes and then simmer for 12-14 minutes until butternut squash is fork tender.
  5. Add in black beans and mix to combine.
  6. Place lid on top to allow butternut squash to cook.
  7. Remove from the heat and add shredded mozzarella cheese on top to melt. Place lid on top of pan to allow cheese to melt.
  8. Top with cilantro and green onion. Enjoy!

How to store your leftovers:

It’s best to store any leftovers in a sealed container in the fridge. I like using these for easy fridge storage!

If you want to switch this up, try doing this instead:

  • Try it with ground turkey instead!
  • Use your favorite taco seasoning instead of all of the seasonings.
  • Top it on rice or quinoa to make it a little more hearty!

This Ground Beef & Butternut Squash Skillet is perfect for an easy weeknight dinner and made with a few simple ingredients.

Ingredients

  • 1lb ground beef
  • 10 oz cubed butternut squash
  • 1/2 cup beef broth
  • 1 red bell pepper, diced
  • 1 can black beans, rinsed and drained
  • 1 cup yellow onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper
  • 2 tbsp cilantro
  • 2 tbsp green onion
  • 1 tbsp extra virgin olive oil

Instructions
