Winter Kale Salad

I love a good kale salad and especially love adding in seasonal ingredients to them when I can! This Winter Kale Salad is perfect to make during the cooler months. It’s great as a side salad or top it with any protein to make into a balanced meal.

You can’t beat a good salad to have on repeat during the week. Not only is this packed with nourishing ingredients, but it’s a great way to use some seasonal items too. This time of year, I want all of the pomegranate seeds, pecans and grains in my recipes! Like many of my salads, they are great to top with protein to make into a more balanced meal. Have you tried the Fall Kale Salad or Roasted Sweet Potato Kale Salad? Both favorites too! I’d recommend adding chicken or salmon on top of this one!

This kale salad would also be great to serve as a side dish to a holiday party or for a large dinner. It can easily be doubled to make more! Plus, as the dressing soaks into the kale it tastes even better with all of the ingredients.

What you need for Winter Kale Salad:

  • Kale
  • Farro
  • Pomegranate Seeds
  • Pecans
  • Golden Raisins
  • Grated Parmesan Cheese
  • Olive Oil
  • Maple Syrup
  • Dijon Mustard
  • Scallion
  • Apple Cider Vinegar
  • Sea Salt
  • Garlic Powder
  • Lemon

How to make this kale salad:

  1. Start by preparing the dressing: olive oil, maple syrup, dijon mustard, scallion, apple cider vinegar, lemon, sea salt and garlic powder. Mix together.
  2. Pour on top of kale and massage it to soak into the kale. It’s important to do this to make the kale taste better!
  3. Top with cooked farro, pomegranate, pecans, golden raisins and grated parmesan cheese.
  4. Mix together and serve.
  5. Enjoy!

How to store your kale salad:

It’s best to store any leftovers of your kale salad in a sealed container in the fridge. I like using these for easy storage!

If you want to pair this salad, try doing this:

  • Add your favorite protein like chicken or salmon!
  • Have it as a side with steak or a wrap at lunch time.
  • Mix in rotisserie chicken when you make it.

This salad will keep in the fridge for up to 2-3 days! If you want to keep it even longer, massage the kale on the day you want to enjoy it 🙂

This Winter Kale Salad is full of flavor and packed with seasonal ingredients to enjoy during the cooler weather. Perfect to top with any protein or serve as a side.

Ingredients

  • 7 cups kale
  • 1/2 cup grated parmesan cheese
  • 1/3 cup chopped pecans
  • 1/3 cup golden raisins
  • 1/3 cup pomegranate seeds
  • 1/2 cup farro, cooked
  • 1/4 cup olive oil
  • 1 1/2 tbsp maple syrup
  • 1 tsp apple cider vinegar
  • 1 tbsp scallions, chopped
  • 1 tsp dijon mustard
  • 1/2 lemon, juice
  • 1/4 tsp garlic powder
  • 1/4 tsp sea salt

Instructions

  1. Start by preparing the dressing by combining olive oil, lemon, maple syrup, dijon, apple cider vinegar, scallion, sea salt and garlic powder. Mix together.
  2. Prepare a large bowl with your kale.
  3. Pour on top of kale and massage it to soak into the kale. It's important to do this to make the kale taste better!

Notes

I like to use fresh parmesan cheese.

Can switch pomegranate seeds for apple.
