One Pan Butternut Squash & Chicken Sausage Orzo

I feel like I can easily get stuck in a dinner rut where I donโ€™t know what to make but want something quick, easy, and crowd-pleasing. Bonus points if it doesnโ€™t require a long list of ingredients (especially when theyโ€™re ones I already keep on hand). Thatโ€™s where this new recipe for One Pan Butternut Squash and Chicken Sausage Orzo comes in.

Itโ€™s made with minimal ingredients, brings in those cozy fall vibes with roasted butternut squash, and features one of my favorites with the chicken apple sausage. Everything comes together in a creamy, flavorful orzo that packs in veggies, protein, and comfort in every bite. Itโ€™s the kind of meal that feels special but is still simple enough for a busy weeknight. Plus, it reheats perfectly for lunch the next day.

What you need for One Pan Butternut Squash & Chicken Sausage Orzo:

  • Orzo
  • Salted Butter
  • Yellow onion
  • Garlic cloves
  • Chicken Apple Chicken Sausages
  • Spinach
  • Grated Parmesan Cheese
  • Vegetable broth
  • Thyme
  • Garlic powder
  • Sea salt

How to make this one pan meal:

  1. In a heated pan, add butter, garlic and onion to sautรฉ.
  2. Add in cubed butternut squash (small cubes!) and seasonings and mix to combine. Sautรฉ for 5-6 minutes.
  3. Add in the chicken sausages and continue to sautรฉ for 3-4 minutes.
  4. Pour in orzo and vegetable broth and bring to a boil for 2 minutes. Reduce to low/simmer for 7 minutes, continuing to stir.
  5. Add in spinach and grated parmesan and stir.
  6. Remove from the heat and serve with additional parmesan on top.
  7. Enjoy!

How to store your leftovers:

It’s best to store any leftovers in a sealed container in the fridge! I like using these for easy storage.

If you want to switch it up, try doing this instead:

  • Use your favorite chicken sausage!
  • Try it with kale instead of spinach or completely leave out
  • Add in other veggies like mushrooms or shredded brussels sprouts

  • 3 chicken apple chicken sausages
  • 1 cup orzo, dry
  • 1 1/2 cup butternut squash, small cubes
  • 1 cup yellow onion, diced

  • 2 cups vegetable broth
  • 1/2 cup grated parmesan cheese
  • 1 cup spinach
  • 1 tsp thyme
