Buffalo Chicken Baked Tacos
If you’re looking for a new easy weeknight dinner or simple gameday snack, you have to try these Buffalo Chicken Baked Tacos! I love a baked taco for a way of switching up your tacos but still keeping it so delicious and easy too.

I’m always looking for a new recipe to make for an easy weeknight dinner and my recent obsession has been a baked taco! Not only are they so simple to make, but so many ways to switch them up too. In case you missed my recent recipe for my Ground Beef and Bean Baked Tacos, those are also a delicious option! I knew I wanted to make a buffalo chicken one because I’m obsessed with all things buffalo chicken and I feel like these would make for a perfect gameday snack too.
The key to perfecting the baked taco is in prepping the tortilla before!! Be sure to read the instructions on making sure they are really warm before adding in all of the ingredients. It will be a make or break (literally ;))

What you need for Buffalo Chicken Baked Tacos:
- Chicken Breast
- Chicken Broth
- Buffalo Sauce
- White onion
- Garlic cloves
- Tortillas
- Shredded Mozzarella Cheese (or Pepperjack)
- Garlic Powder
- Sea Salt
- Paprika
- Avocado Oil Spray
- Cilantro
How to make these tacos:
- In a crockpot, add chicken breast, garlic, onion, chicken broth, buffalo sauce, paprika, garlic powder and salt. Mix to combine. Set the crockpot to cook on high for 3-4+ hours.
- Remove chicken from crockpot once cooked through and shred with fork before adding back into the crockpot.
- Preheat oven to 375 degrees.
- Place tortillas on a baking sheet and place in the oven for 3-4 minutes while oven is preheating **this is important so the tortillas are warm and won’t break.
- Be sure to assemble tortillas while they are still warm! If they aren’t still warm, place back in to warm before assembly.
- Add shredded cheese to each tortilla and then add shredded buffalo chicken to one side before folding into a taco. Do this to all tortillas.
- Lightly spray with avocado oil spray.
- Place in the oven to bake for 15 minutes. Broil for 2-3 minutes.
- Top with cilantro and red pepper flakes. Enjoy!
How to store your leftovers:
It’s best to store your leftovers in a sealed container in the fridge! I like using this container for easy fridge storage.
If you want to switch these up, try doing this instead:
- Use your favorite tortilla
- Switch it up with a different cheese like monterey jack, pepper jack or shredded mozzarella!
- Use your favorite dipping sauce

You can! I like to use the white corn tortillas here but have also made bigger baked tacos by using the Siete Almond Flour Tortillas
You can! I suggest if using rotisserie chicken, to shred it and mix with buffalo sauce and spices and then use it for the taco filling.
These are best to enjoy right after making them! Although they are delicious when reheated as leftovers too.
