Buffalo Chicken Salad

The limit to flavors of chicken salad doesn’t exist and I can’t get enough of them. This Buffalo Chicken Salad is another one to add to your weekly meal prep rotation. If you love buffalo flavors then you will love this one!

Buffalo Chicken Salad

If you’ve been here for a while, you know I love a good pre-made salad to have prepped and ready for the week. They are just the best, easy meal to keep in the fridge and put in a wrap, on toast or serve with crackers for a quick, simple and satisfying lunch or dinner. I have many chicken salad recipes for you to choose from, depending if you want something a little more savory or on the sweeter side. There are also many that are great for hosting or tailgates. The flavors in this buffalo chicken salad are so good! I love all things buffalo and have a few recipes on One Balanced Life that are some favorites of yours that include Buffalo Sauce! What you need for Buffalo Chicken Salad:

  • Rotisserie Chicken
  • Buffalo Sauce (I used this one!)
  • Celery
  • Green onion
  • Red onion
  • Avocado oil mayo
  • Plain greek yogurt
  • Sea salt
  • Onion powder
  • Garlic powder
  • Black Pepper

How to make this salad:

  1. Finely chop up celery, green onion and red onion.
  2. Shred rotisserie chicken.
  3. In a small bowl, add avocado oil mayo, plain greek yogurt, buffalo sauce and seasonings to mix together.
  4. In a large bowl, combine shredded chicken, celery, green onion, red onion and pour dressing on top.
  5. Mix together to combine.
  6. Enjoy!

How to store your leftovers:

It’s best to store your leftovers in a sealed container in the fridge. I like using these for easy storage!

If you want to switch this up, try doing this instead:

Use regular mayo instead of avocado oil mayo.

Try it with shredded chicken breast or canned chicken instead of rotisserie chicken

This Buffalo Chicken Salad is perfect to meal prep for the week and made with simple ingredients!

Ingredients

  • 3 cups shredded rotisserie chicken
  • 1/2 cup celery
  • 3 tbsp green onion
  • 1/2 cup red onion
  • 1/2 cup avocado oil mayo
  • 1/4 cup plain greek yogurt
  • 1/4 cup buffalo sauce
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • dash of black pepper

Instructions
