One Pot Lemon Shrimp Orzo

One Pot Lemon Shrimp Orzo

I’m always looking for ways to switch up dinner while keeping it super simple too! I love a good one pot meal and so this orzo dish will easily be a go-to around here! Plus, the flavors of lemon, shrimp and asparagus are perfect for the spring/summertime. This dinner takes 30 minutes to throw together and is a meal that everyone will enjoy!

What you need for One Pot Lemon Shrimp Orzo:

  • Orzo
  • Shrimp
  • Garlic cloves
  • Yellow onion
  • Asparagus
  • Vegetable broth
  • Grated parmesan
  • Lemon
  • Lemon zest
  • Sea salt
  • Black Pepper
  • Olive oil
  • White Cooking Wine

How to make this orzo:

  1. In a pan heat up olive oil. Add shrimp to cook until pink. Remove from the stove for now.
  2. Pour in white cooking wine and scrap off any excess left on the dish. Add your minced garlic and onion to saute.
  3. Add in asparagus to saute.
  4. Add vegetable broth and orzo and bring to a boil.
  5. Turn heat to a simmer and put lid on. Let orzo cook for 7-9 minutes until it soaks up the broth. Continue to stir throughout so the orzo so doesn’t stick.
  6. Pour in grated parmesan cheese.
  7. Remove from the heat and add lemon zest and lemon. Mix to combine.
  8. Enjoy!

How to store your leftovers:

It’s best to store your leftovers in a sealed container in the fridge. I like using these for easy storage!

If you want to switch this up, try doing this instead:

  • Leave out the shrimp!
  • Use a different veggie like zucchini or peas instead of asparagus.
  • If you don’t want the lemon flavor, you can leave out.

This One Pot Lemon Shrimp Orzo is perfect for an easy summer weeknight dinner! Packed with flavor and a meal that everyone will enjoy and feel good after.

Ingredients

  • 1 cup orzo
  • 15-18 shrimp
  • 1 cup chopped asparagus, cut into 1" pieces
  • 2 garlic cloves, minced
  • 1 small yellow onion, diced
  • 2 cups vegetable broth
  • 1/3 cup grated parmesan cheese
  • 1 tbsp white cooking wine
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp lemon zest
  • 1 lemon, juiced
  • 1/2 tsp garlic powder

Instructions

  1. In a pan heat up olive oil.
  2. Coat shrimp with sea salt, black pepper and garlic powder to saute.
  3. Add shrimp to cook until pink. Remove from the stove for now.
  4. Pour in white cooking wine and scrap off any excess left on the dish. Add your minced garlic and onion to saute.
  5. Add in asparagus to saute.
  6. Add vegetable broth and orzo and bring to a boil.

Notes

I used frozen Argentinian Shrimp and defrosted them before cooking.
